Chipotle chicken wings

Here’s a zingy little number that’s finger-lickin’ amazing! When you’re next down the street, grab a kilo of chicken wings and pop into the local supermarket and grab some chipotle peppers in adobo sauce. These wings can be done in the oven or on the BBQ, so if you’re heading up the mountain for a contest or a bit of DX, these can be made in advance, but keep them in the car fridge until you’re ready to cook them.

  • 1 kg of chicken wings tips removed, cut in half

for the dry spice rub

  • 2 teaspoons mustard powder
  • 2 teaspoons chilli flakes
  • 2 teaspoons celery salt
  • 2 teaspoons garlic powder
  • 1 tablespoon brown sugar

for the HOT sauce

  • 2 tablespoons cider vinegar
  • 2 teaspoons smoked paprika
  • 2 tablespoons maple syrup
  • 2 teaspoons hot chilli sauce sambal oeleck
  • 1 tablespoon chipotle peppers in adobo sauce finely chopped


  • Preheat your oven to 200°C
  • Grab yourself a large baking tray and cover it with baking paper.
  • In a large bowl, mix together the dry spice rub ingredients. Add the wings and stir to coat thoroughly.
  • Place on the oven tray in a single layer and roast for about 45 minutes until golden and cooked through.
  • Remove from the oven.
  • Mix the hot sauce ingredients together in a small bowl.
  • Brush the cooked wings generously on both sides with the hot sauce and either return to the oven to roast for another 10-15 minutes or cook on both sides on the BBQ.
  • The wings are ready when they turn a dark mahogany red-brown and smell totally amazing.
  • Serve hot with a COLD drink.
